Thick & Creamy Foolproof Mayonnaise

Learning this process may seem intimidating, but don’t worry, I take you through step by step and you’ll become a pro in no time!

Ingredients

  • You can half this recipe, if needed.

  • 2 Eggs (room temperature)

  • 2 Cups Light Olive Oil (make sure to get the LIGHT olive oil, the dark has a more intense flavor)

  • 1 1/2 teaspoons Real Salt

  • 1 teaspoon Ground Mustard Powder

  • 1 1/2 teaspoons Lemon Juice (fresh is the best, but I don’t always have that, so I use Real Lemon Juice a lot)

  • 1 1/2 Tablespoons White Vinegar

  • If wanting a more stable (thicker more like store bought) mayonnaise add the cornstarch slurry

  • 1/2 Cup COLD Water

  • 1 1/2 Tablespoons Cornstarch

Directions

  • If doing the cornstarch slurry continue, if not move onto making the Mayonnaise. Both are really yummy!

    Cornstarch Slurry:
  • Add COLD water and cornstarch to a small pot and cook on stovetop, until it thickens, stirring the whole time.
  • Once thickened, set aside and turn off stovetop.

    Making the Mayonnaise
  • Remember don’t feel overwhelmed, you can do this!
  • Add all the ingredients, including the cooled cornstarch slurry, into a jar that fits an immersion blender snuggly all the way to the bottom of the bottle or jar.
  • THIS. IS. THE. TRICK for either a failed mayo or a successful mayo!
  • You have to have an IMMERSION BLENDER!!! I’ve tried many other ways to make mayonnaise and this is the only foolproof way I’ve found to do it.
  • Now add the immersion blender ALL THE WAY to the bottom of the jar.
  • Then turn on the immersion blender, leaving it at the bottom of the jar.
  • DO NOT PULSE UP AND DOWN.
  • Now that your blender is on, slightly pull up one side of the blender and it will start to emulsify and thicken.
  • Once this happens, start to pull the blender up slowly as it emulsifies, keep moving up until it reaches the top of the mixture and is combined.
  • Don’t over mix it, as it will break down and become thin.
  • Only mix until combined.
  • You’ll get a feel for it, don’t worry! It sounds more complicated than it is!
  • Once you do it one time, you’ll get the hang of it and it won’t be intimidating anymore!
